My Two Favourite Sandwiches to Spice Up Your Lunch Time

Make these for yourself, or as a treat for someone else!




Sandwich One:

  • Thinly slice a potato.

  • Thinly slice a shallot, into rounds.


For the Chimmichuri:

  • Dice half a shallot

  • Dice a big clove of garlic

  • Chop some parsely and add it to a bowl with the diced shallot and garlic.

  • Finely chop a red chilli and add to bowl.

  • Then add a quater cup of red wine vinegar and the same ammount of oil.

  • Add a good sprinkle of smoked salt (regular is also fine)

  • Some dried oregano and mix well!

  • Fry the shallot rings in vegatble oil until crispy

  • Do the same with the potato slices.

  • Then melt some mature cheddar on the bottow of the baguette

  • And assemble!

  • Potato, then chimmichuri, then shallots then rocket to finish.



Sandwich Two:

  • Thinly slice an apple.

  • Chop some wallnuts.

  • And then toast them in a dry pan.

  • Toast your bread!

  • Melt some brie under the grill.

Then

  • In a hot pan add some honey and chilli flakes until the mixture caramelises.

  • Add the jam onto the brie.

  • Then the wallnuts

  • Then the apple.

  • And finish with some rocket.

  • And voila!
